Brown Sugar Meatloaf

Meatloaf is to Donald Trump what bronto burgers were to Fred Flintstone. Well, maybe they're not so glorious as all that, even relatively, but despite their peasant quality they can be hearty and delicious and make both great comfort food in the cold and dark months and filling sandwiches as leftovers.

Ingredients




  • 1½ lbs. lean ground beef

  • 2 eggs

  • ¾ cup milk

  • ½ cup bread crumbs (crackers work very well)

  • ½ cup chili sauce

  • ½ tsp. crushed fresh ginger

  • 1 small (about 1 cup) yellow onion, small diced

  • 1 large (about 1 tsp.) clove garlic, finely diced

  • 1 tsp. brown sugar

  • ½ tsp. black pepper

  • 1 pinch (approx. ⅛ tsp.) allspice



Directions




  1. Preheat the oven to 350ºF. In a lightly oiled or greased 10" loaf pan pour the chili sauce and stir in the ginger and brown sugar with a fork.

  2. Mix the beef, milk, eggs, bread crumbs, onion, garlic, pepper, and allspice in a large mixing bowl thoroughly and pat into a shape the size of the loaf pan and rest on top of the ingredients on the bottom of it.

  3. When the oven is preheated place the loaf on a middle rack and allow to cook for an hour or until the juices start running clear.



Next Time in the Lab



I liked it, but it wasn't quite as flavorful to me as I normally tend to prefer my food to be. Worcestershire, horseradish, and Dijon mustard all come immediately to mind. Oh, and I forgot the salt?




  • Add a teaspoon of Worcestershire to the meat.

  • Add a teaspoon of prepared horseradish to the meat.

  • Omit the allspice from the meat.

  • Add a dash (about ⅛ tsp.) of cumin to the meat.

  • Add a dash (about ⅛ tsp.) of cayenne to the meat.
  • Change the ingredients in the bottom of the pan to be half a cup of spicy Dijon mustard mixed with the allspice and a couple tablespoons of honey.

  • Make the ingredients in the bottom a glaze for the top.
